🇬🇧Recipe with sourdough discards. Cuca is a Brazilian cake with German influences. It is a cross between sweet banana bread and a cake.
Ingredients
140g farinha de trigo / All-purpose flour
80g leite (+/- adicione aos poucos) / Milk (added gradually)
200g levain (inativo/descartes)/ Sourdough discards
1 ovo / egg
50g açúcar/ sugar
30g manteiga temperatura ambiente/ Butter room temperature
6g fermento biológico/ Yeast
3 bananas bem maduras/ 3 very ripe bananas
1 pitada de sal/ pinch of salt

Farofa/Crumble
50 g farinha de trigo/ All-purpose flour
20 g açúcar/ sugar
35 g manteiga gelada / Cold butter
Canela em pó a gosto/ Cinnamon as much as you like.

Unte uma forma
Misture bem o açúcar, a manteiga e depois, adicione o ovo
Peneire a farinha, junto com o sal e o fermento e reserve
Adicione o levain e misture obter um massa homogênea
Vá adicionano o leite e a farinha aos poucos. Mexa e vá conferindo a consistência. Se precisar, adicione mais leite.
Coloque a massa na forma
Deixe em repouso por cerca de 1 hora ou até que tenha crescido de volume e massa esteja aerada.
Coloque as fatias de banana em cima da massa e a farofa
Coloque no forno pre-aquecido 190C por aproximadamente 40 minutos
Grease a cake tin
Mix the sugar, and butter and then add the egg
Sift the flour, with the salt and yeast and set aside
Add the discards and mix it until all is well incorporated
Gradually add the milk and flour. Always check the dough consistency. If necessary, add more milk.
Place the dough in the greased tin
Let it rest for about 1 hour or until it has grown in volume and the dough is aerated.
and place the banana slices on top of the dough and the crumble
Place in preheated oven 190C for about 40 minutes

🇬🇧 Recipe. Loaf with 30% einkorn whole flour. Einkorn is considered the father of all wheat. It is an ancestral grain. It has a high content of proteins, carotenoids and other nutrients. But be careful. It has a weak gluten. So, you better combine it with strong flour.

✴️Dificuldade em encontrar farinha.
estava em Salvador e no supermercado tinha pouca variedade de farinhas.
Encontrei farinhas importadas em lojas especializadas, mas com preços bem salgados
✴️Diferença de clima:
O fermento estranhou o calor e demorou a ativar.
fermentação vai muito mais rápido no calor. Utilizei a geladeira para compensar o calor
✴️Outro forno
Usei forno a gàs e uma assadeira embaixo para prevenir que asse demais na parte de baixo do pão e garantir uma crosta com uma boa cor
✴️Outros utensilios
Substitui o banneton por uma cestinha

But think about it, the dough is properly proofed and full of gas. When entering the oven, with thermal shock, the dough will rise and tear at its most fragile part.
✴️ Therefore, scoring the dough before putting it in the oven helps the release of gas and helps the oven spring.
