Esse \u00e9 um sourdough com um sabor intenso e uma textura \u00fanica. Com um pouquinho de planejamento e prepara\u00e7\u00e3o com anteced\u00eancia, \u00e9 super poss\u00edvel de fazer um p\u00e3o feito com 100% de fermento natural e com o sabor e os nutrientes das sementes. Continue lendo e veha como.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Gr\u00e3os ou sementes?<\/h2>\n\n\n\n<p><strong>Gr\u00e3os<\/strong> s\u00e3o, de forma geral, as sementes dos cereais. Por exemplo: trigo, centeio, aveia, arroz e milho. Um gr\u00e3o integral cont\u00e9m tr\u00eas partes importantes: o farelo (rico em fibras), o g\u00e9rmen (cheio de vitaminas e minerais) e o endosperma (predominantemente amido).<\/p>\n\n\n\n<figure class=\"wp-block-image size-large is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"768\" height=\"1024\" src=\"http:\/\/bailabakes.com\/wp-content\/uploads\/2024\/01\/germen-768x1024.jpg\" alt=\"gr\u00e3o do trigo\" class=\"wp-image-8237\" style=\"width:439px;height:auto\"\/><\/figure>\n\n\n\n<p>J\u00e1 as <strong>sementes<\/strong> abrangem um grupo mais amplo que inclui n\u00e3o s\u00f3 gr\u00e3os,mas tamb\u00e9m sementes comest\u00edveis de outras plantas, como linha\u00e7a, chia, gergelim, girassol e ab\u00f3bora. <\/p>\n\n\n\n<p>Um <strong>p\u00e3o multigr\u00e3os<\/strong> \u00e9 aquele que leva mais de um tipo de gr\u00e3o ou cereal em sua composi\u00e7\u00e3o \u2013 como trigo, centeio e aveia \u2013 e muitas vezes tamb\u00e9m incorpora sementes. Isso resulta em um p\u00e3o com sabor mais profundo, textura interessante e perfil nutricional mais completo.<\/p>\n\n\n\n<p> \u00c9 importante lembrar um p\u00e3o multigr\u00e3os n\u00e3o \u00e9 necessariamente integral. Para isso, \u00e9 preciso que as farinhas utilizadas sejam integrais e que os gr\u00e3os e sementes estejam presentes na massa, e n\u00e3o apenas decorando a crosta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A escolha das farinhas<\/h2>\n\n\n\n<p>Essa \u00e9 uma massa de alta hidrata\u00e7\u00e3o. Por isso,escolhi come\u00e7ar com farinha Manitoba (14% de prote\u00edna), uma farinha de trigo branca com alto teor de prote\u00edna (gl\u00faten). A combina\u00e7\u00e3o dessas farinhas cria uma base robusta, com um miolo mais \u00famido e denso \u2014 perfeito para acompanhar o sabor terroso das sementes.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p><strong>Dica:<\/strong> caso use uma farinha mais fraca, com menos capacidade de absor\u00e7\u00e3o, diminua a quantidade de \u00e1gua.<\/p>\n<\/blockquote>\n\n\n\n<h2 class=\"wp-block-heading\">Por que usei mais levain?<\/h2>\n\n\n\n<p>Neste p\u00e3o, usei 30% de levain (240g para 800g de farinha), um pouco mais do que costumo usar. Todas foram torradas e demolhadas na noite anterior. Torrar as sementes real\u00e7a o sabor e libera seus \u00f3leos naturais, enquanto deix\u00e1-las de molho evita que &#8220;roubem&#8221; a \u00e1gua da massa.<\/p>\n\n\n\n<p><strong>Important: <\/strong>na hora de incorporar as sementes, elas n\u00e3o devem estar muito \u00famidas. O ideal \u00e9 escorrer bem e, se necess\u00e1rio, sec\u00e1-las levemente com papel toalha. J\u00e1 que sementes encharcadas podem desequilibrar a hidrata\u00e7\u00e3o da massa. Assim, ela se torna uma massa dif\u00edcil de manipular.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">T\u00e9cnica: lamina\u00e7\u00e3o para desenvolver gl\u00faten e incorporar as sementes<\/h2>\n\n\n\n<p>Como a hidrata\u00e7\u00e3o \u00e9 alta (aproximadamente 78%), utilizei a<strong> <a href=\"https:\/\/www.instagram.com\/reel\/CsihxMuo1fk\/?igsh=ZXo3eG9ja3Z3enRv\">t\u00e9cnica de lamina\u00e7\u00e3o<\/a> <\/strong>. A lamina\u00e7\u00e3o \u00e9 uma t\u00e9cnica poderosa: al\u00e9m de desenvolver a rede de gl\u00faten de forma eficiente, ela permite incorporar as sementes de maneira uniforme, sem quebrar a estrutura do p\u00e3o.<\/p>\n\n\n\n<p>Durante a lamina\u00e7\u00e3o, abro a massa delicadamente como uma folha, distribuo parte das sementes de forma homog\u00eanea. Depois, dobro os dois lados na horizontal para o centro, e adiciono mais sementes. Para finalizar, dobro a parte superior e inferior, adicionando o restante sementes.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"800\"
